Vegan Mofo: Oops October 14, 2009

Life was a lot easier when I had all these blogs planned, written and scheduled to post while I was out living life.

So today isn’t gonna be a real Vegan Mofo post… Unless you’d like to know that I ate a lot of peanut butter today and then made some curry for dinner.

My mind is occupied by thoughts of Colorado. I publicly announced it on twitter earlier, but I’m officially stating on my blog now:

My roommate got a job and is moving to Frankfort, KY. The man she’s working for there is part owner of our apartment contract and is terminating our lease with no financial obligation to us. I’m renting a room with a friend back in Evansville for the next few months, getting a second job, saving every penny that I don’t need to pay bills or eat and then MOVING TO COLORADO in February or March.

It’s feels good that life has a great new goal.  I’m so ready to get out of Kentucky, Indiana, the mid-west in general. I’ve gotten great things from this place, but key parts of my life I’ve put on hold because I know I wouldn’t be willing to settle here. This is the next big adventure.

But, to bring it all full circle, there’s this great restaurant in Denver called City O’ City and they have DELICIOUS vegan food and desserts (desserts, I say!) and so I can’t wait to eat there all the time….. 🙂 Happy Vegan Mofo Day 14, folks.

Vegan MoFo: The Magical Fruit October 13, 2009

Listen y’all… I. Love. Beans. Okay? I just do. They’re amazing. So today I’m sharing with you my favorite bean soup. This baby is packed with beans from every angle. I love it and it is a perfect fall/winter pick-me-up.

(I got this recipe from the Vegan Outreach pamphlet that is available in pdf or mail form.)

Bean Soup

Ingredients:

1 medium onion- chopped

2 tsp minced garlic

2 tbsp oil

2 cups veg broth or salsa (I use all salsa but you can also do half and half)

15 oz each:

  • diced/crushed tomatoes
  • red kidney beans (drained/rinsed)
  • vegetarian refried beans
  • black beans (drained/rinsed)

1/2 tsp cumin

Check out how easy this is to make: In your soup pot, sautee the onion and garlic in the oil. Add all the other ingredients and bring to a boil. Reduce the heat and simmer for 10 minutes.

Eat and be happy.

Vegan MoFo: Vegan Hair Care October 9, 2009

When I went vegan, probably the biggest shock to me was just how many products besides food are infused with animal by products or are tested on animals. Call me naive, but I was under the impression that animal testing truly had fallen out of the public eye because it had fallen out of practice. (I know, I know— I said you could call me naive!) So having discovered this, I was more than happy to give up anything that wasn’t in keeping with my beliefs.

Today I want to know: What’s everyone’s favorite vegan hair care products? Mine, hands down, (and thanks to the wonderful Happy Vegan Yogini) is Lush. Right now I’m using the Seanik shampoo bar. I’m also still working my way through a bottle of Kiss My Face conditioner, but I think once I’m finished with it, I’ll get a bar of Lush conditioner. I love. love. love. it. Anyway, I’d love to know what everyone else uses, so share with me!

Vegan Food of the Day!

I made Vegan Dad‘s biscuits but I made them how the Happy Herbivore makes them. I haven’t gotten to make the pot pie she coupled with them, but I plan to do it soon. At any rate, these are yummy yummy comfort food biscuits and I have happily been enjoying them for breakfasts with some homemade (not by me) peach jam. They are perfectly divine and they remind me of mom’s home cooking!

 

Vegan MoFo: I’ve got the munchies October 8, 2009

You know those times that you’re just hanging out at home, watching a movie or lazing around on the interwebz and suddenly it hits you…

SNACK. ATTACK.

All you want to do is munch and munch and munch. Hey- I’m vegan… I’m not dead. It happens to me, it’s safe to say, a couple times a week (and depending upon the week… it might even be a daily basis…). And just because I’m vegan doesn’t mean that the things I could potentially snack on are healthy for me either… OREOS are vegan, for pete’s sake! So you see, I still have to make the right choices too. Now, in today’s edition, I thought I’d share with you my favorite healthy vegan snacks.

First and foremost, allow me to pledge my undying devotion to the Larabar. These things are delicious and a wonderful healthy boost to your day. I, myself, enjoy one on my way to work in the mornings. They have so many varieties it’s almost overwhelming and I can honestly say that there isn’t one that I don’t like (I may just like some less than others.) My hands down favorites include Coconut Creme Pie, Cashew Cookie, Cocoa Molé and Peanut Butter Cookie. I can’t say that I”ve seen one that was less than 70% raw, they’re all vegan, kosher, unprocessed, non GMO and all that good stuff. They’re great sources of fiber and Omega 3 & 6 Fatty Acids. Plus… they are filling! If you’re new to veganism, I would highly recommend you keep them stocked at your house at all times. You can find them at most major groceries, definitely at health food stores and the most extensive collections I’ve ever seen are at Whole Foods Markets.

Next up for yummy snacks I keep on hand is fruit and veggies. If I’m in one of those moods where my hand might never stop dipping into that bag of chips, then I go the healthier route by preparing some fruit or veggies. I’ll cut up an apple, peel an orange, or cut any other kind of fruit into pieces so that if I’m going to snack mindlessly (which I know is not the best way to snack, but hey! it happens!), at least I’m snacking on something nutrient packed. My roommate and I are also big fans of roasting veggies or boiling okra or something like that for snacks.

My wonderful twitter friend @gomelissago once shared one of her favorite snacks that is super duper easy to make: drain and rinse a can of chick peas, coat them in olive oil, nooch and spices of your choice, then bake them in the oven, at about 400F until they are crispy. They are to. die. for.

And my final suggestion for a great snack, plus coming in as today’s Vegan Food of the Day, is YogaVive Apple Chips! I reviewed them last week and I can not say enough good about them. They are deliciously wonderful snacks to keep on hand and carry with you on the go. Vegan MoFo: Curried Tomato and Bean Soup October 7, 2009

Curried Tomato and Bean Soup! PER-FEC-TION on a blustery autumn day. If you want the recipe, like most of them, I can’t take credit for it, so go here. I guarantee you’ll have all the ingredients for this simple soup on hand, or else I don’t know how you manage to keep yourself alive. I don’t think I can tell you just how much curry makes my life worth living, so I’ll just note that I did probably double the amount that this recipe calls for. Do it to your tastes though, of course. But know that I’m judging you if you use less curry than I do. (Do your taste buds work? I mean seriously… I think curry was specifically handed down from the Divine Consciousness… how could you only want what the recipe calls for?????)

Note from the author: Forgive my food photography skills. I’m aware that they leave something to be desired. So shoot me. Maybe my pics are food porn to the eyes, but as far as my tummy is concerned, these recipes taste good enough to make me think I oughta say a few Hail Mary’s.

Pacific Natural Foods Vanilla Oat Milk. It is beyond nommy.

2. What are the top 3 dishes/recipes you are planning to cook?
Biscuits from Vegan Dad. Veggie Biscuit Pot Pie from Happy Herbivore. And brussel sprouts.

3. Topping of choice for popcorn?
Slather it in caramel baby.

4. Most disastrous recipe/meal failure?
It was back when I was a meat eater. I don’t even want to get into it, but do you remember that scene in Bridget Jones when she dyed her pot of soup blue? Mine was something like that.

5. Favorite pickled item?
Ye ol’ cucumbers.

6. How do you organize your recipes?
I do a lot of internet searches and then if I really love something and think I’ll make it a lot, I write it down and add it to my cookbook.

7. Compost, trash, or garbage disposal?
Trash and garbage disposal. I wish we could compost, but we live in an apartment.

8. If you were stranded on an island and could only bring 3 foods…what would they be (don’t worry about how you’ll cook them)?
brussel sprouts, apples, larabars

9. Fondest food memory from your childhood?
On Christmas morning, every year, my mom slaves away in the kitchen making a huge feast. One year our dog at the time, Lady, jumped up on the table (something she NEVER did) and devoured half of it. True to the Naes family form, we were pissed for 30 seconds and then we set to laughing.

10. Favorite vegan ice cream?
Good Karma Organic Rice Cream: Carrot Cake

11. Most loved kitchen appliance?
french press

12. Spice/herb you would die without?
curry or red pepper flakes

13. Cookbook you have owned for the longest time?
30 Minute Veggie Meals by Rachel Ray

14. Favorite flavor of jam/jelly?
Peach

15. Favorite vegan recipe to serve to an omni friend?
Right now I’d probably make them Pumpkin Black Bean Casserole

16. Seitan, tofu, or tempeh?
Tofu.

17. Favorite meal to cook (or time of day to cook)?
I always cook in the afternoon because that’s the only time of day I have free.

18. What is sitting on top of your refrigerator?
Nothing, as a matter of fact. It fits in a space with a cabinet right above it. In that cabinet, however, there are baking pans and a bag of onions.

19. Name 3 items in your freezer without looking.
Corn, Strawberries, Ezekiel Bread

20. What’s on your grocery list?
Right now I need some fresh veggies. I’m jonesing for yellow squash. I spend most of my time in the grocery in the produce section or the canned bean aisle.

21. Favorite grocery store?
Locally the health food store I go to is called Elbert’s, and I have to supplement it with a trip to Schnucks. In general I recently had my first Whole Foods experience and think that may be it. But you can’t deny Trader Joe’s either.

22. Name a recipe you’d love to veganize, but haven’t yet.
Eggplant parmesan. I know there are vegan versions out there, but I haven’t gotten around to making it yet.

23. Food blog you read the most (besides Isa’s because I know you check it everyday). Or maybe the top 3?

Well I guess price wise, the most extravagant thing I bought was Ezekiel Cinnamon Raisin english muffins.

Hmmm I’m not sure. I don’t get super fancy with my cooking, so recipes I research are usually pretty basic. I’ll let you know when I come across something?

I mentioned them above but I’ll say it again. I love Endangered Species Chocolates. A pretty substantial portion of them are vegan and they are really top quality chocolates. If you’re going to treat yourself, you might as well do it right.
